2 Ingredient Banana Pancakes

Today I would like to share my favorite recipe for a cozy Sunday breakfast. These delicious banana pancakes are not only super easy to make but they are a healthier alternative to your regular pancakes. 

You really only need a banana and an egg for the batter. I would recommend you use a very ripe banana with a few brown spots. That way they are much softer and it will be a lot easier for you to mash it up.



Put both ingredients in a bowl, mash up the banana and stir it together with the egg. Depending on how I feel I will now sprinkle some cinnamon on top and add in some Flax and Chia seeds. 
At this point you can really add in everything you want. Oats to make it more filling, some milk of your choice will help if the batter is too dry and fruits like apple slices will make your pancakes extra special and delicious.



Put some sunflower or coconut oil in a pan on medium heat and pour about a 1/4 cups of the batter into the pan. Flip the pancakes once they're golden brown and flippable :D That should be after about 2 to 3 minutes. 





When they're done I like to stack my pancakes, drizzle on some maple syrup or honey, sprinkle some more cinnamon on top and top it off with a few dark chocolate chunks. Again, you can choose whatever toppings you like. I also recommend fruits and berries. Pomegranate seeds can be great for some extra tartness :)

Et voilĂ ! You made yourself some delicious and somewhat healthy breakfast pancakes!

Ingredients:

  • 1 Egg
  • 1 ripe Banana
  • Seeds and spices of your choice
  • Toppings of your choice
Directions:
  1. Mash up banana, mix with egg in a bowl
  2. Optional: Add in Flax seeds, Chia seeds, Oats, Cinnamon, Milk, Flour.. (Whatever you feel like)
  3. Heat up a pan with sunflower/coconut oil on medium heat
  4. Pour 1/4 cups of the batter into pan
  5. Cook each side for about 3 minutes, until golden brown
  6. Optional: Top off with your favorite toppings
  7. Enjoy!
