Easy Banana Bread Recipe

Thursday, November 3, 2016

Now that Halloween is over, it's time for me to officially get into the Christmas spirit. I have started decorating a little and the whole house constantly smells like cinnamon. Mainly because I can't get enough of this delicious and fairly healthy (and super easy) banana bread :)
I found a good recipe on Pinterest but decided to change it up a little to make it even more delicious. So here is what I came up with:

You will need
  • 2 ripe Bananas
  • 1/4 Cup Maple Syrup
  • 2 Eggs
  • 1/2 Cup Greek Yogurt
  • 1/3 Cup Brown Sugar
  • 1 1/2 Cup Flour
  • 1 1/2 Tsp Baking Soda
  • 1/4 Cup Walnuts
  • Salt
  • Cinnamon

1. Preheat your oven to 180ºC (350ºF) and grease loaf baking pan.
2. Put a few walnuts, some cinnamon and brown sugar as well as some slices of banana to the side for decoration (optional).
3. Mash up the bananas and add in the maple syrup, the eggs and the greek yogurt in a bowl and stir them together.
4. In a second bowl combine all dry ingredients.
5. Then pour the wet ingredients into the second bowl. Stir everything together until well combined, but don't over mix.
6. Pour the mixture into the loaf pan and bake in the oven for about 20 minutes. Then, place the decorative banana slices on the bread, sprinkle over some cinnamon, sugar and the walnuts. Bake for another 15-20 minutes, or until a toothpick inserted into the middle comes out clean.
7. Remove from the oven and let the banana bread cool before transferring it to a plate/cooling rack.
8. Enjoy!!

Let me know what you love to bake around this time of year and if you've tried this recipe!
